Launch the settings app. Scroll down To the iCloud link and click it. Uncheck anything that you don't want backed up here. These are the small potatoes though. Click on "storage and backup" located at the bottom. Click Manage Backup. At the top will be your backup(s) list. There may be more than one if you have multiple devices on the same Apple ID. Click the backup for the device you are on. Uncheck the photos button as this will most likely be the biggest contributor to a larger backup size. The iCloud backup size will be displayed.
