You can transfer from iTunes -- syncing just as with iPad.

I have a ton of music that I've ripped from CDs, as well as downloaded from
various sources (even some from iTunes!), and no trouble with importing into
iTunes & syncing to any of my devices.

If this is his first MP3 player, the ease-of-control may be a factor.
The Classic has the most room for music but the touch devices are far easier
to control IMO. I never did really get the hang of controlling with the
Classic click-wheel, but he may have no trouble at all.
Has he said anything about the ease of use of your iPad for
playing music?

When you say "a lot" of music, what kind of Gigabytage are you talking
about?
I have ~4000 songs (most more than 2-3 mins, since large majority is
classical) which add to 11+ days of play in 28GB.

How much money are you willing to put into this?
How much time do you have to get it done?

And does it have to be a surprise or can you take him shopping for a look &
feel -- Apple Store, if you can get to one, is very good for this but they
do tend to be *crowded*! And of course, there are other brands than Apple --
but if you are already in the Apple ecosystem it's probably easiest to stick
with that.

Where's this cruise going, anyway??

Hubby has asked for a iPod or MP3 player. First time ever. He bought ear
phones he likes. Wants it for the cruise. What do you suggest. I'll even
spring for a real iPod if that is what he wants. He has a lot of music on
his lap top he wants to transfer.
Do you have to buy from iTunes or can he transfer through iTunes what he
already has. He is picky about sound. Needs good sound. He won't wear ear
buds.
