Just go to the add account in the beginning. The AT&T SIM card stuff is embedded.
Just go to cellular in setting. You can set up a new iPad account or add to your share plan. Done. The SIM card slot is ONLY for Verizon.

I, too, just got my new iPad Pro 9.7 (in rose gold - wow!), and am in a quandary as to how to get my AT&T cellular service up and running.
On my old iPad 2 I was/am using an AT&T sim card sent to me by my son that he used in his iPad 2 and is no longer using.
That "old" sim card will not fit into the slot on my new little iPad Pro. I was told by Apple support that I need to go to my local AT&T store to get a new sim card.
My sense is that I can't do that myself as the account is under my son's name and info. I have a call into him to discuss how we might handle this. I'm in AZ and he is in CA.
