I, too, just got my new iPad Pro 9.7 (in rose gold  -  wow!), and am in a quandary as to how to get my AT&T cellular service up and running. 

On my old iPad 2 I was/am using an AT&T sim card sent to me by my son that he used in his iPad 2 and is no longer using. 

That "old" sim card will not fit into the slot on my new little iPad Pro.  I was told by Apple support that I need to go to my local AT&T store to get a new sim card.

My sense is that I can't do that myself as the account is under my son's name and info.  I have a call into him to discuss how we might handle this.  I'm in AZ and he is in CA.

Since the account is in his name, you may well need to do this through AT&T, but first go to Settings —> Cellular Data, and tap on "Set Up Cellular Data".

You may not be able to complete it all yourself, but when you get to the AT&T store, it will help to be familiar with the options already.
