I imagine ostrich is very lean meat? There was an ostrich farm we used to go by in the Mojave Desert, we stopped there once and I had a blast taking pics of those goofy birds.

I'd imagine kangaroo was very dark meat like cougar. Tough. But in a stew or soup totally yummy.
