THANK YOU, Hélène!!!  You just made life (with the iPhone and iPad) MUCH easier for me!  I changed the settings--got rid of the German layout--and now I have only the Swiss German, English, (and Emoji symbol) layouts on my iPhone and iPad, and now I can actually use the auto correct for both languages!!!  This is just great!
 
And thanks also to Kris, because if you hadn't pursued the question, Hélène wouldn't have had reason to help, and I would still be without auto correct!  And now, of course, I, too, am glad that the spacer puts the correct word in!!  LOL 
 
Now to try the external keyboard which supposedly has the Swiss German layout and see what happens! 
 
You have no idea how COOL it is for me to be able to use the auto correct now!

Maybe try
Settings > General > International > Keyboards > Add a keyboard
 
Select another keyboard.
 
Then your iPad keyboard will have a new key at the left of the spacebar, at the right of the numeric key. This will be a toggle key, enabling you to alternate between the two languages' Auto-Correct. You tap that key and you very briefly see displayed, on the spacebar, the language you switched to.
