Those who are using the latest Mac OS have been forced to use a cloud
(not necessarily Apple's) if they want to sync or backup their
notes/calendar/contacts.
There's a *huge* thread about it on one of the Apple forums; lots of
dissatisfaction about not having local sync of those items.
I'm using Windows with Outlook so still sync my "info" to that.
With a USB cable.

Apple has never tried to force me to use the Internet for notes. Where did
you ever get that idea? I've been using the notes app for years with no
problems and I use it every day. Maybe if you spent more time finding out
what you're doing wrong and less time blaming Apple then you might be well
ahead of the game.
