Richard,
I don't know about deleting podcasts or Albums under video (we have different versions of IOS, so maybe that's why I don't see the same things you do).
But if you can't delete photos, it may be that these photos were synced onto your iPad through iTunes, and so to delete them, you need to delete them from the computer that you synced with, resync, and then that should take them off the iPad.

Also, under Photos app, I can delete certain photos but not a few that I need to delete (i.e., the Delete button is grayed out with only certain photos). What is the difference between them and how do I delete those that won't delete this way?
