I would suggest just install a new copy of iTunes onto your Mac, directly over the existing iTunes. Reboot and try the backup again.
It sounds odd, but it did wonders for me.

The good news is that I have finally gotten the iPad to successfully sync with the Mac. It still will not do a backup, though.
So will this help me at all after I restore the iPad?
