If you connect your iDevice to your iMac, display the left sidebar in iTunes, and right-click on the device in the sidebar, one of the choices allows you to copy TO the iMac the apps on the iDevice that are newer than their copies ON the iMac.
Beyond that, why doyou want to delete those apps?
