One big difference is in the different tile sets that each application
has -- some might let you even design your own. I haven't bought them
all, but that's what the descriptions at iTunes App Store are for.
Another big difference is in the number of different tile layouts which
each program comes with. Some have lots more than others. I only ever
play the traditional layout that I first learned to play with, so that's
not important to me, but it might be very important for others.
A third big difference is that some (Midnight MahJongg comes to mind)
allow the player to use a multi-finger gesture to rotate the board to
get different viewing angles while other mah jongg apps don't allow that.
Other than that, they do play the same since the object of solitaire mah
jongg is to match pairs of tiles until the board is cleared.
