Without warning, Apple has associated your Notes App to your email account at Bellsouth. If you ever see your notes disappear from your iPad, look in your Bellsouth mailboxes. Ain't that a surprise? It was to me.
Look earlier in this thread for a way to stop this behavior if it doesn't suite you.
