That is sounding more and more like a problem with iTunes.
Have you uninstalled iTunes using TrashMe or AppDelete or such, rebooted and then reinstalled a clean iTunes?
Then I would try again.
If it is recognised by iPhoto, that rules out problems with the iPad itself and the connection to your Mac & only leaves iTunes (assuming you change nothing else).
