I'm in the dark on this, too.  Backup seems to be by app.  When I check Settings / iCloud, e.g., I don't see Notability, even tho I have data stored in that app.  Does that mean Notability data is backed up with the app?  Lost in a crash?  How does one know?  Documents & Data is turned on, but what documents & data?  Without a visible list of what's going to the cloud, how do we know for sure?
