The longer you wait between sync's, the more changes there are likely to be on both the iPad and iTunes on the computer, and the longer the sync will take.

I update most of my iOS Apps in iTunes on the computer, and I sync my iPhone (with 30 GB od data on it) with iTunes daily. The sync operation takes about 2 minutes, typically (longer if TomTom had pushed out one of their 1.4 GB updates).
