I have my iPad set to keep the last 100 emails received.  You can do this in "settings" then "calendars and email" on the right side will say show the last...whatever number you have it set to. The emails will still be on your account but not on your iPad.

Yes, but after pushing "edit" you then have to touch each and every email you want to delete. When you have like 200 that's a pain.

The magic word you seek is "Edit".

Landscape mode, on the left, at the top of the column.
Touch "Edit", then mark the mails you wish to delete (or move), then touch "Delete" (or "Move")
