I had the same problem as you. I think their servers are just too overloaded. However, instead of either just quitting and not giving any kind of notice, or saying "Update failed", they could have been a bit more informative.

I give up and will not waste anymore time on trying to update my 3rd gen iPad with 16 GB RAM and Verizon capable data.
I have tried updating via iTunes on my iMac and also over WIFI. I have received different error messages including that my network was not working but it was and is. I have Verizon FiOS as my network provider so my network download speed exceeds 30Mbps.
My first attempt to upgrade using iTunes I saw a message that it would take 116 hours (not a typo). Most attempts after that were in the 30 and 40 hour range with a few in the 50's. Over WIFI the estimated times ranged from the 50's to the 70's. Received "timed out messages."
I did remove all sorts of apps that I want to keep and do use. My last few attempts I had over 6GB of free space available.
Probably needless to say that I am frustrated and aggravated.
My iPhone 5 was updated with no problems using iTunes but it did have to run over night.
That is my rant for today. Thanks for letting me vent.
