Then I lose everything, right? 
Which is the best way of doing this? I'm scared something isn't going to work right and I don't want to be up all night doing this.

Hmm, I don't have an Edit button on mine. When I open it, I have the row of dates at the bottom, a page with lines on it and the date at the top. Above the date I have a button with three lines on it. When I touch that button, I get a Lists page and a search field. The rest of the page is empty except the row of dates at the bottom. Seems to me, I'm missing how to create anything and that's why neither Siri nor I can create anything. Do you have more buttons other than the three lines?

If you can open the Reminders app, I would try tapping the Edit button to see if there is any odd thing that you could delete.  This is a wild guess!

Actually an update on this. Siri can't create a reminder because reminders cannot be created at all! I can't even make one manually. I think something is wrong with the app itself. Can anyone help? I did a reboot as well as a hard reset but neither worked.

I did that and she 'created' it fine in her conversation window, but when she went to confirm it, she couldn't save it. The problem is at the confirm or cancel stage.
