1. A good mail server will permit you to set up server-side rules. If you use iCloud Mail, it is pretty straightforward.

2. If you use IMAP on your email account, you can set up Rules in Mail on your iMac and the incoming mail will be sorted on the iMac (presuming you leave it turned on), and synchronized through iCloud to your iDevices.

Mail servers filter out a lot of the spam, but some always gets through. If you have a spam filter (SpamSieve, for example) running on the iMac, then *that* filtering process will be synchronized to your devices as well.
