If you haven't already, download iBooks.
Open iBooks, and download "iPad User Guide for iOS 8".
Search for whatever you have a problem with or want to know more about.

Meanwhile, as in ANY iPad or iPhone or iPod Touch, press and hold the Home button until the apps start jiggling. Ones you can delete will have an "x" in the corner. Tap the "x".

You cannot delete apps that came as part of the iOS.
