I can't speak about how to un-sync them once you've got them in the
cloud, but on your computer (at least on a Windows computer) you can
select which folder(s) you want synced for photos, so you can either
move or copy just the photos you really want into a specific folder on
your computer's hard drive and then tell iTunes to only sync that folder
(or those folders) specifically. That way you don't get it syncing with
your entire photo collection, only the ones you want on the iPad.
