I'm happy that your system works for you.
Mine works for me.
I don't want to have to get (& learn) a whole new set of s/w.
One day I may have to, but I'll face that when the time comes, I have quite
enough to deal with now without spending time on "voluntary torture" rather
than, say, playing with new toys. :-)
I wouldn't even know how to set up rules of what to save as "current" since
it's by content (itself a moving target) not date. Similar with archiving.
My ISP does filter for spam, & I can set up more filters -- but sometimes
stuff goes to spam that shouldn't, so I check that regularly as well (rather
than have it auto-deleted).
I don't want to have to leave my PC (I don't use Mac) running 24/7 just for
mail.
YMMV. JMO. BTJM.

I keep everything on my Mac — everything I want to save, that is, not the
daily/weekly ads stuff, dreck, junk, spam & suchlike. I have reams (years)
of archives — over 1 GB of material, dating back to 1998 — I don't want to
carry around & use mobile-storage for.

I do all this using IMAP.
I have used IMAP for 6 years, since I first got an iPhone and decided I
wanted to be able easily to access my mail on the iPhone as well as the Mac.
I could easily have set my mail up so that ONLY mail dated, say, within the
last week, or the last month, appears as "current" mail, and *everything*
else would be archived on my Mac, and accessible only on my Mac.
Good mail software is very flexible and adaptable.
