Both settings have their pros and cons
Reply All leads to a chattier list; reply only to a quieter one.
Reply-All leads some people to send private responses to the world by accident
Reply only leaves many people wondering why they aren't being heard
No matter which you choose , some people's mail programs will do the Wrong Thing
No matter which you choose some people will be upset and argue for the other way
That said, I have all my current groups on Reply-All
