Cannot on an iPhone just iPad.
Not sure why as while the screen is too small for 4/5 fingers it is still usable with similar gestures, or custom gestures. Assistive Touch has custom gestures but I can't see that you can asign them to a specific function

Enable Multitasking Gestures in Settings>General & then use four or five fingers to swipe between hem.

If I am in an app, how do I switch between apps without using the Home Button?

Do you mean it *should* be used to get out of everything?
Or that *you* don't know any other way to switch between Apps?
