This is exactly what I did, but I did it on the last day of my subscription.

Here is how I stopped my auto-renew on the iPad, using Verizon as the carrier:
I did it 6 days before mynplan was set to auto-renew.
Go settings/cellular data and choose "View Account". Then choose Cancel Plan here:

Then choose "submit" here, with "delete account later" selected.

Then you will see this confirmation screen:
