Wow. No "training"?

I've got my first classroom set of iPads and I was hoping to benefit from the group wisdom on how to introduce them to my students when school starts in a couple of weeks.
-Do you talk about them the first day of school or wait until things have settled a bit?
- How did you go about teaching them to use Keynote, Pages, Numbers, and some of the more common apps?
- What are the procedures for physically passing out and turning in the iPads?
