You select the data to be synced via iTunes when your device is cabled to your computer.  Use the tabs across the top of the page to view each category of data & mark your selections.

Thank you! That is good. Now I am wondering ... if you have, say, 50 GB of data on one device that has the capability of holding 64 GB of data. Your other device only has the capacity to hold 16 GB of data. When you sync the 2 devices, how is it determined what data, out of the 50GB of data gets put on the device that only holds 16 GB of data. I hope the way I worded this isn't confusing.
