Hi Chris. It sounds like you have downloaded iPhone versions of the apps. You should check the app store to see if you can find iPad versions, since they will be optimized for the larger screen.
In the meantime, the iPhone versions will work, but they will be small. You can magnify them to fill your whole iPad screen by tapping on the little "2x" button near the bottom of the iPad screen. This will cause the image to be blurry, however, so if you can find iPad versions that would be the best option for you!
