You can sync with more than one PC, but if you sync music, video, etc, it will overwrite the data on the device with the new data on the next PC.
You can authorize 5 PC in which data that you download from the iTunes store can be used. Music that you own outside of iTunes, can be stored to an USB drive so that you can put it on any PC. I have several laptops and often sync on whichever one is available, but I store my music on my USB drive.
Additionally, there are times when the PC that you sync'd with is no longer available. In this case you will lose everything that you have on the device when you sync to the next PC; unless you use a free app like SharePod - http://www.getsharepod.com to copy your data from the device and import it into the new PC's iTunes app. Once you do this, you can sync with the new PC and put your old music back on during the sync. This app does not handle pictures.
