I can confirm that the Goodreader technique works. Once the attachment has fully downloaded, tap and hold on it until the popup menu with the "Open In" dialogue appears, then scroll to the appropriate app and tap your choice. The corresponding app will open and you'll see a copy of your file there. I was able to send a video from my HTC EVO 4G (via email) to my iPad 2 and save it to both GoodReader and VLC.
