1. Look at your bottom tray and close out those apps that you aren't using. I often find when I am looking at another persons iPad that they have a lot of apps open. I have a couple of photo and drawing apps that use a lot of memory so I close them completely when I am done with them.
You said to look at the bottom tray. Do you mean by double clicking the home button? That shows all of my apps on my iPad. How do you tell if one is running in the background?
This is a function Apple needs to add – perhaps a "green/yellow/red" dot to indicate whether it is running actively in the background or paused, and waiting for the user to reselect it to start up where it left off or stopped dead.
2. Completely shut off your iPad. This means holding the top right key and the home key for a longer time that taking a picture. What this does is wipe out what you have in memory.
If you mean press the Home and the On/Off buttons and hold them until the Apple appears, then this is best described as reBOOTing the device.
You can completely shut off the device by holding the On/Off button until the "slide to power off" slider appears, then sliding it to power off.
There are also several apps that can clean out memory that is not being actively used.
