I would expect that the lower tier of users would have a need to call for support, these are non IT literate, and use the phone for basics as they are not that smartphone literate. So, while your observations will be correct I don;t think they represent the average smart device user. You observations are one subset. the question is, is that 10% of users, 25%, or more?

I use mostly email and texting and Safari and music. See attached. At work I use 3 apps that should be only two but they are obstinate in this regards. I digress. My point is that most people in most situations use a handful of apps. From taking 800-1000 phone calls about smart phones and tablets a month for a few months now I have a decent statistical base to confirm this with. I should run it by a few agents today and check my hypothesis. It seems also that just as many android users as iOS users are clueless about their phone and again of the people that call my call center this appears to be the case. Most people doubt need to know that much because they don't do they much with their phone. IME.

The vast majority of employees to simple work, not everybody works in an office where they need a power holds computer doing many millions of things. If the software were written for the iPad everybody at this thousand person call center could use an iPad instead of the desktop computer there is no technical reason why it could not happen. Many professions are using the iPad as her sole computing device and in some case they had no computing device before. Such as airplane pilots. Stores or going from manual cash registers to point-of-sale systems. Restaurants are going to iPads whereas before they use the pen and paper sure these are specific cases but these are the only ones I can come up with right now the arm tons more think a little instead of just looking inside.
