Bose is not a gold standard, but their noise-cancelling earbuds are awesome.

I use the low end Sennheiser over the ear headset. Good sound. Haven't been a Bose headset fan. To me they sound too bassy.

Oh, I certainly agree that a person with good hearing, in a quiet environment, can certainly hear the difference on some top-line headphones (not so sure about earbuds, however).

I have a Bose QC-30 noise-reducing around-ear headset, but at 70, my upper-frequency hearing is slowly fading.
