Thanks for all your help, I've checked all your suggestions... but I haven't found the solution and the explanations appear not to be for the current OS. With the adjustments I've made I can now pinch my fingers apart to make the text larger (and reduce my eye strain), but this is not dynamic text. I guess it's a problem with GMail that hasn't been addressed. It's very frustrating since I do a lot of emails and I was expecting larger text than what I have on my iPhone... so much for progress.
