Pictures transferred from your computer using iTunes can only be removed using iTunes -- deselecting them in that section, when connected to your iPad.
Albums created by importing from your camera using the connection kit can be deleted in place on the iPad: open the album -- tap the icon (box with curved arrow coming out of it) in the upper right, then start tapping images you don't want, then tap delete.
