I have a few days remaining on my iPad's Verizon 3G account and have decided to cancel the plan until I need it again.  I just went to my Verizon account on the iPad and Canceled.   The Verizon account  then presented me with a choice … a choice that I had forgotten about.  It was defaulted to "Delete Later"   but the other choice was to  "Delete NOW".    This is probably where the original poster had her problem losing her account …. I believe she selected Delete Now.   If you Delete  Later, as I have been doing over the past year plus,   then the actual account exists but remains dormant for a period of up to 5 months before automatically deleting itself.
