Two things that I tried that worked for me lately when Safari just quits:
1. Look at your bottom tray and close out those apps that you aren't using. I often find when I am looking at another persons iPad that they have a lot of apps open. I have a couple of photo and drawing apps that use a lot of memory so I close them completely when I am done with them. I usually only have 3 to 5 apps open at one time.
2. Completely shut off your iPad. This means holding the top right key and the home key for a longer time that taking a picture. What this does is wipe out what you have in memory.
Others have mentioned going to the General settings and clear history and cache. I do this on a regular basis.
