First of all, I have over 450 apps on my iPad. I started collecting apps when I bought my first iTouch and the app store was first open.
I have two iPads, an iPad1 and iPad2, plus two MacBook Pros, an iPhone, and my iTouch. And I actively use all of these items. Both of my iPads are 64G, wifi only. I also have an old netbook, but I am using that dinosaur only once a month for certain PC based programs that I don't want on my Mac.

Apps that I use weekly
FXstudioHD, for photo filters for easy editing of photos on the iPad and iPhone
Corkulous for brainstorming and organizing ideas
Photowall for collaging, I use this to send "greeting cards"
Keynote for presentations
Excel for tracking business expenses mainly travel expenses
Notetaker HD (although Notability had a significant upgrade lately so I might have to see if that becomes my new preference)
Skype
Zenfolio, to upload pictures to my photo sharing site
SketchMeeHD, for photo editing
ArtRage when I want to sketch or radically modify a picture in a painterly like fashion
Ted
Penultimate or Bamboo, I keep flipping between these two stylus based apps
Amazon shopper
Occasional apps
Symphony Pro, an excellent app to compose music (just haven't spent much time there lately)
ForScore, to have sheet music on my iPad
ProKeys, when I am in the mood to play the piano and one isn't handy
Poets pad and Poet, both can be used to write poetry. I flip between the two.
Apps that I rarely use...
Game apps. I have a bunch, but find that I use my iPad for other hobbies and rarely use the games except around the holiday season when I am with friends and family. Scrabble, Monopoly, etc are usually the ones that we use together
