All of my many folders came over fine in the upgrade and YouTube has stayed in the folder with other entertainment apps much like your own.  I've used it a couple of times with no problems.  All of my apps and folders look exactly as they did in iOS 10.  I wonder if there could have been some sort of corruption with your upgrade.  It might be well worth a call to Apple Support or a trip to an Apple Store?

I keep a tidy desktop on my iPads. I have the apps I use tucked into a folder I create. For instant I have on labeled movies/tv. In there I keep all my stuff like Netflix, HBO, BritBox, all the sties where I watch movies. With the new iOS, YouTube won't stay in its folder. Most of my stuff I can't find and I have to do a search. Even iMessage. The icon just is not on my desktop. I can't even get the dock to work for me.
