Syncing audiobooks to non-iOS iPods still works. I have a 30GB iPod with video that I sync my entire audio library (music & audiobooks) to. Everything continues as before.

Find out where they're stored on your Mac and then sync them to iTunes and then sync them to your iPad

A proper hard drive backup will backup every data file on your drive.

EVERYONE should be doing this.

In the off-chance that 10.11 somehow loses your audiobook in iTunes, they should still be present on your backup, and could be re-loaded.
