It appears to be a different sort of backup -- normal syncing isn't
doing the same backup that happens during the upgrade to iOS5. Normal
syncing only backs up data, from what I can tell, rather than
apps-and-data-combined. The iOS5 upgrade appeared to copy every byte (I
needed a huge amount of empty hard disk space for it to work on my
practically full 64GB iPad) before beginning the upgrade. That's what
takes so long. For people who haven't installed many apps nor put much
data on their iPad the process would take much less time.
I got the impression that the iOS5 upgrade backed up everything and then
wiped out everything on the iPad, burned the new OS into whatever eprom
chips are in the device and then replaced everything that it had backed up.
Whether my impression is correct or not, it certainly accounts for why
my first attempt failed until I cleared at least 60GB of hard disk space
on one of my hard drives, after which a repeated attempt succeeded and
took a long long time.
