You don't control the sound a notification makes, other than the one's in Settings/Sounds. (I.e., ESPN app notifications are going to make the Sportscenter jingle sound.) There are a lot of games that have their signature sounds.

You can turn off the sound in notification settings.

Yes. That controls other things but doesn't seem to have an effect on notifications.
