REAL Starbucks stores have Apple Pay. The Starbucks at PHX Sky Harbor are run by HMS and so no Apple Pay. Ran into the same in Las Vegas at one of the hotels. They wouldn't even take a Starbucks card.

I try to use it but few stores in my area have the capability. Once I was out and didn't have my credit card and the store "actually had" the ability to do Apple Pay from my Apple Watch. The clerk enjoyed it because she had never done it before.
So I think if more stores get the technology, people will use it.
