All you need to do is restore the new one from your old one's backup, apart from having to type in the wifi password, everything will be there.
Renaming doesnt keep them separate, but I would rename the new one for clarity. The separation is the device ID, so once DH starts to use the old one, you will have two backups in iTunes, one for each. He can then discard apps, add new ones, change email settings if required, and it will be separate from yours. At this point, his will have your Apple ID, thats handy as apps can be shared, there is a setting to add apps to the other automatically. I suggest him using his email address for iCloud, so that photos, messages etc are kept separate.

My new iPad Air 2 should be delivered in a couple of days. I'm not sure whether I should use an iTunes backup from my current iPad 2 to set up the new one. I'll be keeping the old 2 as a backup and for my DH to use when we travel. So eventually the two will diverge and have separate backups.. I'm not sure the best way to be sure they remain separate. Will just giving the new one a different name be enough?
This is the first time I'm adding an iDevice to the current ones rather than setting up a replacement. Any tips or recommendations to share?
