I thought it was obvious, but I put the iPad on the passenger's side. There is no need to be looking at it at all. In fact, I turn the screen to dark so it's not distracting.

Very true Jim, but doesn't time-lapse photography require a stationary camera?  Which means the iPad can be positioned right smack in the middle of the windshield and it is not a problem as long as the car is not in a driving lane.  As for the GPS apps, it can and should be lower on the dashboard so it is out of the way of the driver's view while driving.

Keep in mind that, in some states, positioning ANYthing on the dashboard or windshield that blocks ANY part of the driver's view of the road is against the law. (To say nothing of ill-considered, dangerous, or just plain dumb…)
