I've used the website http://keepvid.com/ with success recently. Once you enter the YouTube link there, and it looks at the video online, download the largest MP4 version it (hopefully) offers. It should easily play in QuickTime.
If it can only get FLV format, you may have to install Perian (free) to play it back, but it should also work ok.

ps- The KeepVid bookmarklet does not work for me at all. YMMV.
