To touch-type at any speed - say 90+ wpm, my opinion is that you need a keyboard. You can probably type on the ipad at 30-70 wpm, but it is pretty awkward without physical keys to keep your fingers in the right place, and as you say, they are too close together. I can't truly touch-type, without looking at my fingers fairly frequently.
