Don't know about Verizon, but ATT gives keeps you current with how much data you're using. A nice little bar graph in their app. And they mail you if you're about to hit the limit.
At 128 or even 256Kbps, I agree, music is unlikely to add up to 10GB, but when I was using Tidal, it was wise to pre-download, since a single album could cost the better part of a GB.

When she was working in an office, instead of telecommuting, my housemate would stream a radio station over her grandfathered unlimited AT&T account. I don't actually know how many hours, but she never went much over 2 GB in a month.
It may well be that the radio station(s) streamed at lower quality/bit rate.
