I had the exact same experience last night while trying to update my wife's iPhone 5s. She received the update message and decided to proceed before I realized the phone did not have a current backup. the update over wifi failed towards the end of the process. It just got stuck.
So I connected it to my old Gateway laptop that has her iTunes account and things went rather quickly and smoothly with the download UNTIL it also got stuck with the same graphic on the screen of the cable with an arrow pointing toward iTunes. the phone was useless at this point. After about 30 m inures I also had a message on the laptop that my browser was incompatible (IE Explorer) whatever was trying to do at the time.
Of course I wanted to get to sleep early last night but ended up screwing around with this until 2AM.
Eventually, in desperation, I moved her phone to my iMac. Not wanting her apps in my iTunes I did not want to do this but I was fearful for my life if she woke up and found her phone was dead.
Via the iMac I did a complete restore of the phone software because iTunes said that is what I had to do. It worked. Whew. Everything but her apps and data. And the restore named her phone for me which I quickly changed.
Then I reconnected it to the Gateway to restore her apps.
I woke up alive and not dead so I guess she did not check her email this morning, I think she still has to set that up but due to lack of sleep I am not sure.
