Because pretty soon all the in-app purchases would be done the way Kindle
had been getting away with. Why should Apple support that on a wholesale
basis? Look at how many apps are free or very low cost -- the money is in
the extra purchases & why shouldn't Apple get a cut of it? they are
providing the original platform, after all. Those who don't like iTunes
store requirements can go the JB way.
Personally I don't find it much of an inconvenience anyway; I've always
preferred to go to the Safari/full website to look for books. I get better,
fuller results that way & have no trouble clicking on "deliver to my iPad."
Old users will get used to it; new users won't know it was ever done any
other way. And the ebook market is only going to grow.
Don't knock "principle". The USA was founded on it.
